From the winemaker:
Harvested well below 21 Brix, but with wonderful flavor. Not for the “White Zin” purists out there, as this wine is fermented mostly dry. Skins were left on for 5 hours, then directly pressed into stainless steel tank. The 2015 White Zin has pepper, watermelon, and strawberry notes – it is easily our most allocated wine. Best served with a slight chill.
Grapes for the 2015 vintage come from the same 2 vineyards that we source our Vine Starr Zinfandel from (Arrowhead Vineyard + Buckhill Vineyard). Both of these vineyards are non-certified organic, using no chemicals or sulfur in the vineyards. Every year the grapes at the highest elevation of these vineyards suffer from too much sun before becoming completely ripe – so instead of losing the grapes, we pick them early for our rosé! Total production is 180 cases.
All of our wines are made naturally, meaning no use of inoculated yeasts or bacteria. We use only native yeast to spark fermentation. We do not add any powdered tannins or enzymes. A minimal dose of S02 is added 4 weeks before bottling to some wines.
