Very elegant, with feelings of fruit in syrup and balsamic from aging on lees with hints of aniseed, fennel, with excellent acidity, fat, fresh, tasty, persistent, long aftertaste with mineral tones and an excellent bitter touch.
From premium estate fruit from the rugged terrain of Val do Salnés, excess bunches on each vine were discarded at harvest, leaving only a small amount of fruit with optimum concentration. Following fermentation, the wine is aged on the lees for 6 months, then blended with 15% wine from the previous vintage, which has been on the lees for 15 months. The wine then sees 6 months additional aging in stainless steel.
